Thai Sticky Rice with Mango

Yummy Thai dessert recipe!  This is the most popular Thai dessert, at least in the United States.  It's so easy.  You will have to purchase the sweet rice, also known as Thai glutinous rice, from an Asian grocery.


Recipe:

2 C sweet rice
water
1 C sugar
½ 13.5 oz can coconut milk
pinch of salt
2 ripe mangoes

Cream Sauce:
½ 13.5 oz can coconut milk 
1 Tbs sugar
½ tsp salt
½ tsp cornstarch

Rinse rice, cover with water and soak for 30 minutes. Drain enough water to leave rice covered in ¼ inch of water. Microwave on high 10 minutes. Meanwhile, mix coconut milk, sugar and salt well. Check rice for doneness. Add milk mixture to rice and stir until well combined. Cover and rest for 20 minutes. Meanwhile, mix cream sauce ingredients and heat on medium, stirring constantly until it begins to thicken. Do not overheat. Pour cream sauce over rice and serve with cut up mango.
