Smooth Hot Salsa
This is my smooth hot salsa. I don't like large chunks in my salsa unless the tomatoes are raw.
Recipe:
3 medium garlic cloves
2 Jalapeno peppers with seeds
1 Serrano pepper with seeds
1 small white onion
1 small handful of cilantro leaves
Approximately 28 oz chopped Italian tomatoes (Pomi is a brand I like)
Cut stems off peppers and onion, leave skin on garlic and lightly blacken these three ingredients under broiler. Place everything in food processor and process to desired consistency.
Add:
1 lime, juiced
2 Tbs mild oil
2-3 tsp salt
1 tsp cumin
1 tsp sucanut, honey or sugar

Stir all together well until you can't see oil forming on top (about 10 minutes).

Variation I made up from an ingredient list:
1 carton Pomi tomatoes
1 small can green chilies
1 jalapeno
1/2-1 serrano
1 large garlic clove
1 small handful cilantro with stem
2 teaspoons cumin powder
1 tablespoon salt
1 1/2 teaspoons red wine vinegar
1/3 teaspoon TruLemon (or any lime or lemon powder)
