Apple Crisp Pancakes

These are really good pancakes.  You don't even need any syrup or anything on them.  This is my daughter, Amber's, recipe.






Recipe:

1 egg, beaten
3/4 C milk
1 Tbs sucanut or sugar
1 Tbs baking powder
1/4 tsp salt
1/4 tsp nutmeg
1/2 tsp cinnamon
2 Tbs oil
2 Tbs applesauce
1 C flour (half soft whole wheat and AP)
1 C fresh Granny Smith apple, chopped

Mix all together well except apples. Then stir in apples. Drop whatever amount desired onto 300°F griddle. Immediately sprinkle a large spoonful of topping (below) on each pancake. When first side is browned, flip and cook on other side. The crust on these don't stay crunchy if you stack them.

Topping:
2 Tbs brown sugar
2 Tbs flour (either soft wheat or AP)
1 Tbs plus 1 tsp cold butter

Mix sugar and flour together and cut in butter.
