Indian Tacos
Some people refer to these as Navajo Tacos but I learned to make these from my sister-in-law, Merrillee, who is half Paiute so Indian Tacos is more appropriate. Although if you want to get really technical, then Native American Tacos is the most appropriate.
Recipe:
1 lb ground beef, turkey or chicken (if using chicken or turkey add oil or lard while frying)
2 cloves garlic, pressed
2 tsp onion powder
1-2 teaspoons salt
1 teaspoon black pepper
1 tablespoon chili powder
1/4 teaspoon red pepper flakes
1/2 teaspoon paprika
1/4 teaspoon oregano
1 1/2 teaspoons cumin (optional)
1 can kidney beans, drained or not, depending on consistency
2 cans pinto beans, with juice
16 ounces Dana's re-fried beans or 1 small can or less (optional)
Indian Fry Bread
Brown beef with garlic and add all the spices (or substitute 1 envelope of taco seasoning). Add canned and refried beans if using. Layer fry bread with beef mixture and the following toppings:
Tomatoes, diced
Cheese, grated
Lettuce, shredded
Dana's Smooth Guacamole or sliced avocados
Olives, sliced
Sour Cream
Onion, chopped
Dana's Salsa
