Garlic & Lemon Chicken
I got this recipe on the web somewhere and was really pleased with it. Garlic and lemon are so good together!
6 Tbs oil, divided
Recipe:
6 Tbs oil, divided
2 lemons, 1 sliced and 1
juiced
4 cloves garlic, pressed
1 tsp salt
½ tsp pepper
¾ lb fresh green beans,
trimmed
8 sm red potatoes,
quartered
4 chicken breasts,
bone-in or boneless
Put 1 Tbs oil in the
bottom of a 9x13 pan. Arrange sliced lemon on the oil. Mix 5 Tbs oil, lemon juice, garlic, salt and
pepper together in large bowl. Toss green beans in oil mixture and
use tongs to remove them and place them on top of lemon slices in
pan. Toss potatoes in oil mixture and
place them around inside edge of pan on top of beans. Toss chicken
in oil mixture, marinating for awhile if desired, and place on top of
beans in the center of the pan. Pour remaining oil mixture over top
of chicken. Bake 400° for 50 minutes. Remove chicken and bake
another 10 minutes or until bean and potatoes are tender.
