Puffed Rice Balls

These are a tradition for us as they were for me growing up.  They're so simple, but so addicting.  I dare you to eat just one.  I make a huge bowl of them every Christmas and everyone grabs one every time they go by.  The only problem is that there are little pieces of puffed rice all over the house.


Recipe:

12 oz puffed rice
½ C butter
2 C sugar
1 C corn syrup
½ tsp vanilla

Put everything but vanilla in a saucepan.  Bring to boiling, stirring occasionally over medium heat.  Cook for 4-5 minutes but no more.  Put puffed rice in large bowl.  When syrup is done, pour over rice and mix thoroughly with a large spoon. Let it cool a few minutes.  Butter hands and form into balls while they are still fairly hot.
