Dana's Condensed Cream Soups


I've been trying to make the perfect replacement for condensed cream soups.  I'm still not completely satisfied with this recipe but it's the best I've been able to come up with so far.  I think we get used to the canned taste and it's hard to duplicate it until we do the actual canning.  I haven't tried that yet with this recipe.


Recipe:

Mushroom:
1/4 C dried mushrooms, reconstitute and chop fine
1 Tbs butter
1 Tbs oil
2 1/2 Tbs AP flour
2/3 C chicken broth
1/3 C half and half
1/4 tsp chicken or beef bouillon
1/2 tsp sucanut
1/16 tsp garlic powder
1/2 tsp salt or to taste

Melt butter & oil in sauce pan. Add mushrooms and saute. Add flour and stir to make roux. With whisk, slowly add water and milk. Then add spices. Boil and stir for 1 minute.. Equivalent to 1 can cream of mushroom soup.

Chicken:
1 Tbs butter 
1 Tbs oil
2 1/2 Tbs AP flour
2/3 C chicken broth
1/2 tsp chicken bouillon
1/3 C half and half
1/2 tsp salt to taste

Follow mushroom directions.
