Beef & Barley Soup

Comfort Food!

Recipe:

1/2 C chopped carrot
1/2 C chopped celery
1/2 C chopped onion
2 medium garlic cloves, pressed
1 Tbs butter
2 Tbs beef bouillon
7 C water
1-2 lbs chopped cooked roast beef or ground beef
14 oz diced or whole tomatoes w/juice, blended
1 C V-8 juice
1 C barley (can substitute diced 2 diced potatoes)
1 1/2 tsp salt
1 Tbs honey
½ tsp pepper
1/2 tsp dried basil
1/2 tsp dried oregano
1 C frozen peas (can substitute 1 can green beans & canned corn or beans)
2 Tbs chopped fresh parsley on top

In a stock pot, sauté carrots, celery, garlic and onions in butter a few minutes. Add the water, bouillon, beef, tomatoes, barley, salt, pepper, basil and oregano; bring to a boil. Reduce heat; cover and simmer until barley is done, stirring occasionally. Add the peas, simmer, uncovered, for 5 minutes then add the parsley.  Makes 12 C.
