Puffy Pancake

I've heard this recipe called by different names such as German Pancake, or my family called it Hootenanny Pancake.  But Puffy Pancake is what my husband named it and it stuck.  This recipe has always been a favorite in my family.  It's also healthier than other pancakes because it has more protein.


Recipe:

6 eggs
1 C milk
1 C AP or soft wheat flour
½ tsp salt
½ C butter (can reduce to ¼ C)

Put butter in a 9x13 pan and place in oven while oven is pre-heating to 400°F. Remove pan when butter is lightly browned.  Pour batter into pan and bake until puffy and very golden brown, about 25 minutes. (variation: mix melted butter into batter, spray 2 regular muffin tins with non-stick spray and fill less than ½ full with batter.  Bake about 15 min.
