French Fries
Who doesn't like French fries? The sweet potato fries are really good and you cook them just the same as the Russet potatoes. In fact, in the picture below I've cooked them together.
Cover cut potatoes with ice water and place in fridge until ready
to fry. Heat oil to 325° and while it's heating take one batch of
potatoes out of the ice water and place on a towel to dry off as much
as possible. Put potatoes in hot oil, being careful not to add too
many, and fry for 1-3 minutes until they are floppy. Remove to
parchment or paper towel lined plate. Continue until all potatoes
have been blanched. Place them in fridge or freezer to cool off.
Heat oil to 375° and fry potatoes again until lightly browned 2-4
minutes. Drain and sprinkle with salt or house seasoning. Serve
immediately or keep warm in oven until serving time.
Recipe:
Russet or sweet potatoes, cut as desired
Ice water
Oil
Salt & pepper or House Seasoning
