Dana's Ketchup

Most people think I'm crazy for making my own ketchup. But, there is a lot of unhealthy junk in the store-bought kind and this version is easy and quick to make, tastes better than store bought and is healthy.

Recipe:

6 oz tomato paste
6 Tbs whey or water
½ C white vinegar
¼ C honey (3 oz)
½ Tbs corn syrup
½ Tbs plus ⅛ tsp salt
¼ tsp onion powder
⅛ tsp garlic powder
⅛ tsp ground allspice
1 pinch ground clove

Whisk all together in saucepan. Bring to boil, turn down and simmer for 5-10 minutes, adding more water if needed. Cool and refrigerate.

Dana's Whole30 Version

6 ounces tomato paste
½ cup water
½ cup Apple Cider vinegar
2 tablespoons date syrup (1 1/2 ounces)
¼ teaspoon monk fruit powder
½ tablespoon plus ⅛ teaspoon salt
½ teaspoon onion powder
¼ teaspoon garlic powder
⅛ tsp ground allspice
1 pinch ground cloves
½ teaspoon yellow mustard seed (optional)
¼ teaspoon paprika (optional)
⅛ teaspoon red pepper (optional)
1 bay leaf (optional)

Simmer for 5-10 minutes, adding more water if needed.  Remove bay leaf.

For Chili Sauce

Use either recipe but--
Double the onion powder and allspice
Add:
Another pinch or two of cloves
1-1½ tsp chili powder
½ tsp Worcestershire sauce
⅛ tsp pepper

Makes approximately 1½ C.
