Almond Joys
Chuck grew up with these at Christmas time. I carry on the tradition but I've changed the recipe, as usual. These are yummy!
Mix milk, sugar, vanilla and salt. Stir in coconut. Shape in
1 inch balls; press one almond on top of each ball. Refrigerate for about 30 minutes and then press any loose coconut ends to sides and if desired, sprinkle both sides lightly with cocoa powder. Melt chocolate
in double broiler over low heat or in microwave (don't overheat), stirring constantly. Dip all candies and place on wax or parchment paper to dry. Makes approximately 52 candies.
Recipe:
10 oz sweetened condensed milk
2 C powdered sugar
1 Tbs vanilla
¼ tsp salt
14 oz flaked coconut, finely blended
Cocoa powder (optional)
Melting chocolate OR
1 giant Hershey bar plus
12 oz milk or semi-sweet chocolate chips plus
1 Tbs oil
