Fried Rice

This is a basic recipe for fried rice.  You can add just about anything you want to it.  My favorite rice to use for this and anything Asian is brown Jasmine rice!  I can only find it to purchase at an Asian or Oriental grocery.


Recipe:

1 Tbs oil, divided
2 C one day old or older rice, separated
1 egg
salt & pepper
1 green onion
¼ C frozen vegetable (any kind)
2 dashes of fish sauce
2 dashes of sucanut
¾ Tbs soy sauce
1 Tbs oyster sauce


Heat 1/2 Tbs oil in wok on med-high. Add egg, sprinkle with salt and pepper and scramble. Remove. Heat 1/2 Tbs oil to wok again, add green onion and stir-fry a couple seconds, then add separated rice grains and stir fry until heated through. Sprinkle with a little fish sauce and sucanut. Stir in sauces and egg. Turn off heat and stir in frozen peas. This is very versatile and you can add whatever you want such as ham, pineapple, shrimp, mixed vegetables, etc. The key is that the rice should be at least one day old and each grain separated. When it's dry it separates very easily.  If you forget to cook the rice the day before, you can cook the rice in the morning, place it in the fridge, and use it for the supper meal of the same day.
