Baked Asparagus with Sauce
This is how I always cook asparagus. It's so delicious. I serve the sauce on the side for those who don't like it. The only ones who don't like it are the ones who won't try it.
Recipe:
I trim my asparagus by holding the stalk in the middle and bending the bottom of the stalk, letting it break where it wants. This seems to be the place where it begins to be woody. With the leftover stalk bottoms I make cream of asparagus soup. Arrange asparagus on baking sheet. Spray with cooking spray and season with salt and pepper. Bake 400°F for approximately 15 minutes, or until tender. Brown butter in saucepan over medium-high heat. Watch it carefully so it doesn't over-brown. It will foam up and then, just as it starts to turn brown, immediately remove from heat and add soy sauce and vinegar. Serve on side with asparagus.
