No Bake Cookies

This recipe is a family favorite.  It's very quick and yummy!  Adjusted 3/30/2021.

  
Recipe:

2 cups sugar
½ cup butter
1/3 cup cocoa
½ cup milk
3 cups rolled quick or whole oats
½-2/3 cup peanut butter
2 teaspoons vanilla

In a large bowl place oatmeal, peanut butter and vanilla and set aside. Begin melting the butter on medium heat.  When butter has melted at least half way, add the milk, cocoa and sugar. Mix thoroughly almost constantly until it comes to a full rolling boil and then time for exactly 1 minute 15 seconds.  Pour into bowl with oats. Mix well and quickly. Drop by the spoonful onto parchment paper. Cool.  Makes about 35 cookies. (For peanut butter no-bake cookies, omit the cocoa and increase peanut butter to 1 cup).
