Artichoke Spinach Dip
This is the first time I tried this recipe I found on-line. It's delicious!
Recipe:
4 Tbs butter
3-4 lg cloves garlic, minced
5 oz fresh baby spinach
12-16 oz cream cheese, softened
28 oz marinated artichoke hearts, well drained
2 C sour cream
½ C mayonnaise
1 tsp hot sauce
1 C Romano cheese, grated
1½ C grated Mozzarella cheese, divided
Salt to taste if desired
Pepper to taste
Chop spinach to desired consistency. Heat butter over medium heat, add garlic and saute, then add chopped spinach and stir until wilted and most of the moisture is gone. Turn to low and add the cream cheese, stirring until melted. Remove from heat and add remaining ingredients except the pepper, reserving a little bit of mozzarella for the top. Put it in an oven safe dish and top with cracked black pepper and just a splash of grated cheese. Bake 375°F until bubbly. Serve with bread, crackers or chips.
