Dana's Apple Mango Salsa
This is my fresh salsa recipe. I made this up after watching my dad make his a few times (he doesn't use a recipe and it's never exactly the same) and by reading the ingredient list on a packet of salsa seasoning mix.
Recipe:
1 medium
vine tomato, diced
5-6 medium
Roma tomatoes, diced
1 small onion, diced
1 small
Gala or Fugi apple, diced
1 small
mango, diced
1
Jalapeno pepper, chopped
2 large
handfuls cilantro, chopped (about ½ cup)
2-3
cloves garlic, chopped
Juice of
½ lime
1 tsp cumin
1 tsp cumin
1 tsp
dried bell pepper
¼ C V-8
or tomato juice
a few
dashes of sugar to taste
salt and
pepper to taste
Prepare and mix first 7 ingredients. Sprinkle generously with salt and 2-3 dashes of sugar. Let sit about 20 minutes, stirring occasionally. Drain juice. Add remaining ingredients. Best if eaten the same day it's made.
