Tuscan Haystacks
I got this recipe from my mom, except for the chili. It may seem odd to combine all of these things, but the flavor combination is delicious, especially with the coconut! An easy meal.
Recipe:
Rice
Chili recipe below
Frito corn chips
Cheddar cheese, grated
Lettuce, shredded
Olives, sliced
Tomatoes, diced
Dana's Salsa
Pecans or almonds, coarsely chopped
Coconut, sweetened and shredded
Green onion, sliced
Layer each serving in the order given or however you want. Serves about 6.
Chili:
1 lbs ground beef
1/2 large onion, chopped
1 cloves garlic, pressed
2 Tbs Dana's ketchup
2 Tbs sucanut or brown sugar
1/2 Tbs beef bouillon
1 Tbs chicken bouillon
1/4 tsp celery powder
1 1/2 Tbs chili powder
1/2 tsp cumin
1/2 Tbs Worcestershire sauce
1/8 tsp basil
1/4 tsp paprika
¼ tsp ground black pepper
3 oz tomato paste
6 oz V-8 juice or tomato juice
1 can pinto beans with juice
1 can kidney beans with juice
Brown beef with onion and garlic. Add rest of ingredients, cover and simmer for an hour or so.
