Creamy Chicken & Carrot Soup
I can't remember who gave me this recipe but we've enjoyed this soup for many years. It's hard to stop eating it.
Recipe:
1 C chopped carrots
¼ C chopped celery
¼ C chopped onion
1-2 C small broccoli pieces (optional)
1¾ C chicken broth
¼ C butter
¼ C flour
2 C milk
1 C cubed Velveeta cheese (no brand substitutes)
1 lb chicken, cooked and cut in small cubes
dash of paprika
Simmer the first 5 ingredients until done and set aside. With butter, flour and milk make a white sauce by: In medium saucepan melt butter then add flour, mixing constantly. Right before the flour mix turns golden brown, slowly stir in milk with wire whisk. Bring to boil for 1 minute. Add white sauce to the vegetables. Add chicken and cheese. Heat on medium until cheese is melted. Sprinkle with paprika before serving.
