Dana's Onion Rings
These onion rings are so good, the best in the world! They are very crispy. I don't like onion rings that are breaded, they have to be battered. This is also excellent for battered mushrooms!
Recipe:
Ice cubes
14 oz sourdough starter
4 oz soft whole wheat flour
4-6 oz cold sparkling water or club soda
1/2 tsp salt
1 Tbs sucanut or sugar
2-3 medium-large sweet onions, sliced
AP flour for dusting
Oil for frying
Fill the bottom of a large bowl with ice cubes. Place medium bowl on top of ice. Place starter, flour, water, sugar and salt in medium bowl and whisk to combine. I like the consistency to be like pancake batter or a little thinner. Separate onion slices, dust with flour and toss. Heat 1 inch oil to 375°F. Dip the flour-coated onion rings one at a time in the starter mixture and then drop in hot oil and fry on both sides until light to golden brown. If the oil is less than 375°F they will be greasy. Serve with your favorite sauce or Dana's Fry Sauce.
