Mashed Potato Casserole

I can't remember where I got this, but it's very good.


Recipe:

3 lbs russet potatoes, boiled until tender
1 C evaporated milk
½ C sour cream
2 Tbs butter
1 tsp salt
½ tsp pepper
2 C Cheddar cheese, shredded & divided
1 lb bacon pieces, baked until crisp
2-3 green onions, sliced

Peel potatoes while hot and put in mixing bowl with milk, sour cream, butter, salt and pepper. Mix until creamy. Add 1½ C cheese and half the bacon on low speed just until incorporated. Put into 9x13 greased pan, top with rest of bacon and bake at 350°F for 20-25 minutes. Top with remaining cheese and onion and bake another 3 minutes.
