Panko-Topped Fish Fillet

This is a really yummy topping for any fish, with the crunchy crumbs and the delicious Parmesan flavor.


Recipe:

1 lb fish fillets (any type)
1/2 C Panko bread crumbs
3/4 C Parmesan cheese, freshly grated
4 Tbs butter, melted
1-2 Tbs oil
Salt and pepper

Preheat oven to 425°F. Put oil on baking sheet and put in oven to get hot. Salt and pepper 1 lb of fish and place on baking sheet. Bake 5 minutes, turn fish and bake on the other side 5 minutes. Combine bread crumbs, cheese and butter. Top fish with crumb evenly and put into broiler for 2-3 minutes until the crumbs are golden brown.
