South American-Type Rice

A quick and delicious side-dish rice!


Recipe:

1 C long-grain rice
2 medium-large cloves garlic, chopped
2 Tbs onion, chopped fine
3 Tbs oil
1 tsp salt
1 tsp sugar
2 C water

Rinse and stir rice in cold water and drain. Repeat until water is mostly clear. Drain and set aside. Lightly brown garlic and onion in oil. Add rice and water. Bring to boil, cover and reduce heat to simmer until all the water is absorbed and rice is tender. You can also cook this in a rice cooker, but followed the directions of your cooker for the amount of water.
