Mini Quiche

I just had these a couple of days ago at a meeting and I loved them.  You could put whatever you want in them such as ham or sausage or any vegetables.  They remind me of chili rellenos, which I love.  And they are super easy and quick.


Recipe:

8 eggs, beaten
1 C sour cream
1 small can chopped green chili
8 oz medium cheddar cheese, grated
8 oz pepper/jack cheese, grated

Preheat oven to 375°F.  Beat eggs and sour cream together.  Stir in green chilies and cheeses. Spoon into 24 regular size greased muffin cups, about 1/2 full.  Bake for 15 minutes, until barely done on top.
