Texas Sheet Cake
This is another cake I enjoy. I like it slightly under-baked so it's very moist and soft. It's hard to get it to look good because the marshmallows right under the frosting are lumpy.
Recipe:
2 C flour
2 C sugar
1 C butter
1/4 C cocoa
1 C water
1/2 C buttermilk
1 tsp baking soda
2 eggs, well beaten
1 tsp vanilla
1 large bag of mini marshmallows
Put flour and sugar in bowl. Bring to boil the butter, cocoa and water. Mix with flour and sugar. Add remaining ingredients except marshmallows, whisking quickly when adding eggs. Bake in greased sheet pan at 400°F for 18-22 minutes. Place marshmallows on top of cake and put back in oven for 2-3 minutes. Cool and frost with icing below.
Icing:
4 Tbs cocoa
4 Tbs evaporated milk
1 cube butter
1 lb powdered sugar
1 tsp vanilla
