Bacon Cheddar Potato Soup


Recipe:

½ C onion, chopped
½ C celery, chopped
8 Tbs butter, divided
5 C potatoes, cubed
29 ounces chicken broth
12 ounces sharp cheddar, grated
2 C cream
1 1/2 C water
6 oz bacon, cooked and crumbled
4 Tbs flour
1/2 tsp pepper
1 tsp salt
1 tsp paprika
1/2 Tbs parsley

Saute onions and celery in 4 Tbs butter until tender. Add potatoes and broth, bring to boil, cover and simmer until potatoes are tender. In small skillet, melt 4 Tbs butter, add flour to make roux, cook for 1 minute and add water to thicken. Add to potatoes and broth and boil 1 minute. Add cream, cheese, bacon and spices. Cook on low until cheese is melted. Garnish w/ croutons if desired. Serves 6-8.
