Rice Pudding
This is another recipe I learned from my Paraguayan friend, Ligia. This pudding is absolutely amazing!

10-12 C milk, divided
2 cinnamon sticks
1 C rice
2 Tbs butter
3 egg yolks
Pinch of salt
1 can sweetened condensed milk
1-1 1/2 C sugar
1 Tbs grated orange peel
2 Tbs coarsely chopped orange peel
Ground cinnamon
Bring 4 cups milk and cinnamon sticks to a boil. Remove from heat. Meanwhile rinse rice really good and soak in water for a few minutes. Drain and add to boiled milk and soak uncovered for two hours. Add 4 more cups milk. Cook to low boil until rice is very tender, approximately 30 minutes. Stir occasionally, adding 2 more cups of milk. Mix condensed milk, yolks, salt, sugar and orange peel. Add this mixture with the butter to the rice, stirring quickly so the yolks are well mixed. Cook until yolks thicken, 10-15 minutes, stirring often. Let cool for a few minutes, add more milk if necessary, and sprinkle heavily with ground cinnamon. Serve warm or refrigerate until cool or overnight. May add more milk for desired thickness. As it cools the rice absorbs the liquid.
