Snicker Doodles
These may be my favorite cookie. I've been making these since I was a girl and they are still delicious. These cookies just have to be eaten with milk. I refuse to use shortening for health reasons which is an ingredient in snicker doodles, so this is my adaptation and it's even better than the original.
Recipe:
2/3 C coconut oil
1/3 C butter
1 1/2 C sugar
2 eggs
1 tsp vanilla
2 1/2 -2 3/4 C flour
2 tsp cream of tartar
1 tsp soda
1/2 tsp salt
Cream together coconut oil, butter, sugar and eggs. Add the remaining ingredients. Roll into small balls. Roll balls in cinnamon sugar mix (heavy on the cinnamon--I use 2 parts sugar to 1 part cinnamon). Bake at 400°F for 8-12 minutes.
