Roasted Garlic Mashed Potatoes
These are super yummy potatoes. You don't need any gravy or anything on them.
Recipe:
7 medium Russet potatoes (about 3.5-3.75 lbs)
1 bay leaf
1 whole head garlic cloves
1 tsp oil
1 C fresh grated Romano cheese (You can try different cheeses, such as Parmesan or Borsin, etc.)
4 oz cream cheese
1/2 C cream
1/2 C butter
1 Tbs chopped fresh parsley
½ tsp black pepper
1 tsp salt
Cut top off garlic head but leave skin on. Drizzle oil over it and bake covered at 325°F for 35-40 minutes. Cool, squeeze garlic out the ends that were cut and chop. Put potatoes in pot, cover with water and boil with bay leaf until tender. Drain, let them cool a little and then skin them. Put everything in a mixer bowl and whip on high until smooth and fluffy.
