Cornbread

This is a super yummy cornbread recipe, the best one I've found.  Some people like cornbread dry but we like it moist with some sweetness.


Recipe:

3 C flour (I use 1 C soft whole wheat and 2 C AP)
1 1/3 C sugar
1 C corn meal
2 Tbs baking powder
1 tsp salt
2 1/2 C milk
4 eggs, lightly beaten
2/3 C oil
6 Tbs butter, melted

Preheat oven to 350°F. Grease a 9x13 baking pan. Combine flour, sugar, corn meal, baking powder and salt in a medium bowl. Combine milk, eggs, vegetable oil and butter in a small bowl; mix well. Add wet ingredients to dry ingredients and stir JUST UNTIL BLENDED, leaving some lumps. Pour into prepared baking pan. Bake for 35-45 minutes or until wooden pick, inserted in center, comes out clean.
