Dana Banana's Bread
I've tweaked this recipe a lot. We like our banana bread super moist! The method of baking it I got from my friend, Karla.
Recipe:
3 1/2 C ripe bananas (about 5 large)(try 4)
4 eggs
1 C oil (try half melted butter)
2 C sugar
3 1/2 C AP flour, very loosely packed or less
1 1/2 C soft wheat flour, very loosely packed
2 Tbs raw wheat germ
2 tsp baking soda
1 tsp salt
2 tsp vanilla
1/4 C plain yogurt or sour cream
1/2 tsp cinnamon
1 1/3 C coarsely chopped walnuts or chocolate chips
Cream together the oil, sugar and eggs. Add bananas, vanilla, yogurt, cinnamon, salt and soda. Fold or stir in flour and nuts, just until you can't see any raw flour. Makes 3 regular loaves. Bake at 250°F for 1½ hours, time it! Very moist. Best frozen.
