Amazing Chicken Wings With Amazing Sauce

This is my copykat version of Winger's amazing chicken wings with the amazing sauce.  They are so delicious! It's hard to stop eating them.


Recipe:

For the wings
12 chicken wings
1/2 C AP or soft whole wheat flour
1/4 tsp salt
1/4 tsp cayenne
1/4 tsp paprika
1/2-3/4 C club soda or sparkling water
Oil for frying

Take each wing and break it at the two joints.  Cut the tip off each wing at the joint and discard.  Cut the wings in two pieces at the joint.  Mix everything else together well.  You want a thin batter.  Preheat oil, enough to cover the wings, to 375°F.  Dip each wing piece in the batter and let drip off.  Fry a few at a time for 8-10 minutes, until golden brown.  (Don't let your temperature drop below 325°F or they may be greasy).  Drain on rack for a couple of minutes.  Move to a plate and heavily drizzle with cold sauce.  Serve while hot.

For the sauce
1 C sugar
7 Tbs sucanut or 6 Tbs sugar + 1 Tbs molasses
1/2 C Frank's Original Hot Sauce (no substitutions)
1 dash garlic powder
3/4 tsp salt
2 Tbs corn syrup
1 Tbs white vinegar

Mix everything together in a sauce pan and bring it barely to a boil over medium heat.  Remove and cool.
