German Potato Pancakes

I got this recipe from my German friend, Edith. It's very versatile and you can put whatever you want on them. Traditionally they put apple sauce on them, but we also like ketchup or they are good plain too.


Recipe:

4 small-medium potatoes (Yukon Gold preferably)
1 small-medium onion
1-2 eggs
2-4 Tbs flour
Salt & pepper
Dash of cayenne pepper (optional)
Oil

Peel potatoes if desired. Grate potatoes and onion into a cotton towel or cheese cloth and sprinkle them with salt. Combine egg, flour, salt and peppers in a bowl. Heat thin layer of oil in frying pan on medium-high heat. Squeeze juice out of potatoes & onion very well. Add potatoes and onion to egg mixture and mix well with hand. Put a spoonful (about 3-4 Tbs) of potatoes into the pan and press down with back of spoon to spread it into a pancake circle. Fry until edges are brown, turn and fry until done. Drain on rack. Repeat until all pancakes are cooked. After first pancake is done, taste and add more salt if needed. You can cook several at a time, depending on how big your pan is.
