Poppy Seed Salad Dressing

We've been enjoying this dressing for years.  Austin especially loves this dressing and as of right now, it's the only dressing he will put on salad.  Otherwise, he just eats the salad without dressing.  He's so happy I made this batch that he is right now sitting at the table with an entire head of ice-burg lettuce in one hand and the dressing in the other.  He's eating the whole head.  Just to clarify, Austin is 17!


Recipe:

⅔ C sugar
⅓ C white vinegar
1 Tbs grated or chopped onion
1 tsp dry ground mustard seed
1 tsp poppy seeds
¾ tsp salt
¼ tsp black pepper
1 C mild oil

Dissolve sugar in vinegar in saucepan over stove. Combine all but oil in a blender. Then slowly add the oil while blending to emulsify.

For creamy:
Substitute oil for ½ C mild oil, 2 Tbs sour cream and 6 Tbs Dana's mayonnaise.

For berry or other:
After blending everything together, turn blender to low and add 4 oz raspberries or strawberries to the creamy version.  Can omit mustard if desired since it lessens the flavor of the berries.  You can also add 3 Tbs orange juice or try other juices.
