Caesar Salad with Creamy Caesar Dressing

My creamy Caesar dressing will make any Caesar salad taste delicious.  I'm very pleased with this dressing, it's absolutely fabulous!


Recipe:

Romaine lettuce, washed and cut to your liking
Fresh basil leaves, torn
Campari or similar tomatoes, cut to your liking (optional)
Red onion, halved and sliced
Fresh Parmesan cheese, grated
Grilled salmon or chicken breast (optional)
Crisp bacon pieces (optional)
Creamy Caesar Dressing (below)


Dana's Creamy Caesar Dressing

1 medium-large garlic clove, smashed
1 cup Dana's mayonnaise (8 oz)
3 tablespoons rice vinegar
2 tablespoons fresh lemon juice
1¼ teaspoons anchovy paste
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1 tablespoon sucanut or sugar
1¼ teaspoons salt (add more later if it sits in the fridge very long)
¼ teaspoon black pepper
1 tablespoon sour cream (½ oz) optional
⅔ cup grated Romano and Parmesan cheeses

Blend all until smooth (the cheeses can be finely grated and stirred in if desired).  Makes approximately 1½ cups.

For Dairy Free
Omit sour cream and cheeses
Add 1 teaspoon nutritional yeast
Increase salt to 1½ teaspoons
Soak ½ cup raw cashews in boiling hot water for 30 minutes, add to all but mayonnaise and blend on high until smooth.  Then slowly blend in mayonnaise.
