Potato Boats

These are very easy and versatile.  
 

 Recipe:

Russet potatoes
Butter
Kosher or coarse sea salt
Romano or Parmesan cheese, grated
Crisp bacon pieces
Cheese, shredded - any variety
Green onion, sliced
Sour cream (optional)

Wash and dry potatoes.  With your hands, rub butter all over the outside of each potato.  Sprinkle salt all over outside.  Bake at 350°F for 1 hour.  Let potatoes cool a little, then cut them in half lengthwise.  Scoop out the very center of each potato half, leaving a layer of potato next to the skin.  Drizzle or brush melted butter on the inside of each potato skin and sprinkle each with Romano or Parmesan cheese.  Put them back in the oven to bake until the edges are browned.  Layer each skin in this order:  bacon, very generously helping of grated cheese, green onion, bacon again.  Put them back in the oven until the cheese is melted.  If desired, serve with sour cream.
