Ham and Broccoli Crepes

You can put just about anything in a crepe and it will taste good.  The sauce for this is heavenly with that hint of horseradish.


Recipe:

12 crepes
12 oz ham, cut in pieces
2 lbs broccoli, steamed crisp tender
12 slices Swiss cheese
Mushroom sauce (recipe below)

Place 1 ham slice, 1 cheese slice and 3-4 broccoli florets on each crepe. Roll up. Place in 9 x 13 pan. Spoon mushroom sauce over crepes. Bake 350°F for 20-30 minutes.

Mushroom Sauce

6 Tbs butter
6 C fresh sliced mushrooms
5 Tbs flour
2 Tbs chopped chives
2 tsp horseradish
1/2 C cream
2 C chicken broth
Salt to taste

Melt butter in saucepan. Sauté mushrooms 3-5 minutes. Stir in flour. Add all but cream. Cook over medium heat, stirring constantly, until thickened. Stir in cream and add salt to taste.
