Basic Roast Beef
This is just a basic Sunday dinner roast recipe that I've been making my whole 30-year marriage. This is basically how my mom made it as I was growing up. Very much comfort food for me.
Recipe:
1 any size Beef Roast
Oil
Carrots, washed and cut in half or large chunks
Potatoes, peeled and cut in half or quarters
1 Onion, cut in quarters (optional)
4 Tbs Dana's Dry Onion Soup mix
Salt
Black pepper
1/2 C water
Place room temperature roast in 9 x 13 pan. Drizzle with a little oil on one side and heavily season the same side with salt and pepper. Place under high broiler until well-browned. Turn roast to other side, drizzle with oil and season with salt and pepper. Place under broiler again until well-browned. Remove from oven and place potatoes, carrots and onion all around roast. Put onion soup mix on top of roast and pour water in pan. Season vegetables and meat again with salt. Cover with foil and bake at 325°F for 3-4 hours until meat is tender. You can also put it in the crock pot but you will have to cook it longer.
