Cilantro Lime Rice

This rice is really good.  It's very mild in flavor, great in texture and hard to stop eating!


Recipe:

1 1/2 cups long grain rice
2 tablespoons oil
1 tablespoon butter
1 tablespoon minced garlic
1/3 cup finely chopped onion
4 cups water
1 1/2 teaspoons salt
1/2 cup chopped cilantro
1/2 cup chopped green onion
1/4 cup grated Romano or Cotija cheese
1 lime

Rinse rice and soak in some water for 15 minutes, then drain well. Brown garlic and onion in oil and butter. Add rice and stir to coat. Add water, ½ lime juice and salt. Stir once but not again until it's done. Bring rice to boil, reduce heat and boil until water is absorbed and rice is done (or you can cook it in a rice cooker, using the amount of water as specified for your cooker). Chop cilantro and green onion together very fine. Add cheese and mix together with rice and other ½ of lime juice.  You can also add a rinsed, drained can of beans (black, pinto or red).
