Ham Hock and Beans
Super easy and delicious. My mom made these while I was growing up and I love them. Ham hocks are inexpensive and give the beans a wonderful flavor. These also make delicious re-fried beans.
Recipe:
3 C dry pinto beans (or any dry beans)
1 Ham hock
1 Tbs salt
Water
Place beans in a large stock pot. Rinse beans and cover with water by about 5 inches. Leave to soak overnight or 7-8 hours. Drain and rinse a couple of times. Cover beans with water by about 3 inches. Bring to a boil, skim off foam, add ham hock, cover and cook over medium-low heat until beans are soft (about 2 hours). Add salt and cook another few minutes. If water gets low, add more. Adjust salt to taste.
Tip: Put 1 whole peeled potato in the water with the beans. Remove the potato and discard after about 1 hour of cooking. This really helps reduce the gassy effect of the beans. It really helps!
