Sauteed Pork Chops or Steaks

This is the way I always cook pork chops or steaks.  Very tasty and if you start with room temperature meat it will be tender.


Recipe:

5-6 Pork chops or steaks, 1/2 inch thick
2 Tbs butter
1 Tbs oil
Salt
Black pepper
AP flour

Let pork sit out and come to room temperature. Generously salt and pepper both sides of chops. Melt butter and oil in frying pan over low heat. Turn heat to medium and wait for the butter to quit foaming and to barely start to brown. Flour each piece of pork generously, pressing the flour into the meat. Put each piece in the pan and cook for three minutes. Turn and cook for another three minutes. Meat continues to cook after you remove it from the pan, so don't over-cook it or it will definitely be tough.
