Dana's Italian Dressing

This is some super delicious Italian Dressing.  I made this recipe up and am very pleased with it.  If desired, you can mix the dry ingredients, store it for later and then add the wet ingredients when you need it.



Recipe:

¼ tsp dried carrot
¼ tsp dried bell pepper
2½ tsp sugar
1½ tsp salt
¼ tsp citric acid
½ tsp onion powder
scant ½ tsp Italian seasoning (try 1 teaspoon)
½ heaping tsp garlic powder
⅛ tsp dried parsley
½ tsp fresh lemon juice
⅛ tsp soy sauce
4 Tbs white vinegar
2 Tbs water
1 Tbs freshly grated Romano cheese
1 Tbs freshly grated Parmesan cheese
4 tsp mayonnaise
¼ C mild oil
¼ C good quality ex-virgin olive oil (or use this for all the oil)
try 1/4 teaspoon black pepper, 1/8 teaspoon celery salt, 

Chop the carrot and pepper fine. Add the rest of the dry ingredients, then the lemon juice, vinegar and water. Add oil and mayo a little at a time while blending on low until emulsified.  Add the cheese for one or two quick blends. 

For the dry mix, combine all dry ingredients and omit the cheeses and all the wet ingredients. To make the dressing from the dry mix, just add about 2 Tbs dry mix to the cheese and wet ingredients.
