Waffles

Waffles are good, especially with bacon and syrup.  Grandma Harris always makes these when we visit and our trip to grandma's wouldn't be the same without them.  Cook the bacon and then lay a strip down either before or after you pour the batter onto the hot waffle maker.  Fruit syrup is the best and so easy to make.  Update 5/2019:  I've changed this recipe and now it's the perfect waffle!!


Recipe:

2 large eggs
2 C flour (sub ½ tapioca flour for spongy waffles )
1½ C milk, adding up to ½ C more if needed after a little rest in the completed batter
½ C oil
2 Tbs sugar or honey
4 tsp baking powder
½ tsp salt
½ tsp vanilla

Beat eggs. Add milk, oil, sugar, salt, vanilla, baking powder and mix. Add flour just until mixed. Add more milk or buttermilk to make it how you like (I like mine pouring consistency). Cook on hot waffle maker.

For Buttermilk Waffles:  Substitute buttermilk for the milk, decrease baking powder to 2 tsp and add 1 tsp baking soda.
