Crock Pot Beans and Rice
This recipe was created one night when I hadn't planned for dinner and I had some leftover beans I had cooked for something else. It was a hit.
Recipe:
3 C dry beans (a variety)
4 C cooked rice
3 cloves garlic
1 Tbs onion powder
½ tsp celery powder
1-2 pkg polish sausage sliced & browned in coconut oil
½ tsp black pepper
¼ C honey
2 Tbs beef bouillon
6 oz V-8 or tomato juice
1 Tbs Worcestershire sauce
¼ C Dana's barbecue sauce

Rinse beans, put in crock
pot and cover with water by about 2 inches to soak overnight. Cook
all day, or until soft, keeping the beans barely covered in water. Drain about 2/3 of bean juice into
cup and set aside. Add rest of ingredients, adding rice last. If
desired, add back bean juice according to the thickness you like.
