Thai Basil Chicken Fried Rice
This fried rice is amazingly delicious. Thai basil is different than sweet basil. It is kind of spicy and peppery and seems addictive to me. You have to buy it at an Asian market. Thai chilies are very hot so you can adjust the amount according to how you like it.
Recipe:
1/3 C oil
6 big cloves garlic, chopped
1-3 Thai chilies, chopped
½-1 lb chicken breast, sliced on angle
4 C Jasmine rice, day-old or cold
½ sm red bell pepper, julienne
½ sm green bell pepper, julienne
3 oz small mushrooms, halved
1 sm zucchini, thick sliced & halved
1 handful fresh green beans
2 C Thai basil leaves, loosely-packed
3 Tbs oyster sauce
2 Tbs fish sauce
2 tsp palm sugar or sucanut
1 cucumber, sliced
Recipe:

Combine oyster sauce,
fish sauce and palm sugar together. Heat oil on medium heat. Add
green beans and cook until they just begin to pucker. Add garlic and
chili pepper and lightly brown the garlic. Add chicken and cook until
chicken is half way done. Add sauce and stir for a few seconds. Turn heat to high, add
rice and stir fry until all is incorporated. Add other vegetables
and stir for about 30 seconds. Add basil and stir to incorporate.
Remove from heat. Serve with sliced cucumber.
