Monster Cookies
These cookies are really yummy and are quite healthy, except for all the chocolate I add. One time I made these for an activity my daughters were going to attend. The person in charge of the activity collected all the cookies from the parents and placed them on her piano. She had several bags of cookies on her piano. When she wasn't looking, her dog jumped up on the piano and took his choice of the cookies, which happened to be mine. She said they were the only ones he would eat and he ate the entire bag of two dozen.
Recipe:
2 C butter (can subtitute 1 C for 1 C peanut butter)
2 C sucanut (or brown sugar)
2 C sugar
4 eggs
2 tsp vanilla
1 tsp butter flavor
2 C soft whole wheat flour (or any other)
2 C AP flour
5 C rolled oats, blended to course flour
1 tsp salt
2 tsp baking powder
2 tsp baking soda
24 oz chocolate chips (or 12 oz chocolate chips and 12 oz M&Ms)
8 oz Hershey bar, broken into large chunks
3 C chopped nuts (I use 2 C Walnuts & 1 C Pecans)
Beat butter, sugars, eggs and flavorings until creamed. Add salt, baking powder and baking soda and beat until well combined. Add oats and flours and beat until well combined. Add candies and nuts and fold until well mixed. Drop by Tbs onto ungreased cookie sheet and press to flatten with spoon. Bake 375° for 12-14 min. Cool on wire rack.
