Tortilla Squares
My friend, Ligia, made one of these for lunch when I was in Virginia. I added the fresh basil which is a must. These are super easy, quick and delicious.
Recipe:
Dana's Flour Tortillas, make them 2.0 oz or more
Thin ham slices
Strips of whole milk mozzarella cheese or any cheese you want
Tomato slices
Fresh basil leaves
Butter
Dana's Pickled Jalapenos (optional)
Heat a skillet over medium-low to medium heat. Place three slices of ham in the center of a large tortilla. Add a couple thick strips of cheese, two or three tomato slices and a basil leaf. Fold the sides together so they meet or overlap. Fold the other two sides together with a large overlap. Butter the hot skillet and slowly brown the squares on both sides. You don't want to cook them too fast so the cheese will melt and the tomatoes will warm. Serve with pickled Jalapenos if desired.
