Haupia (How-pee-ya)
This is a traditional Hawaiian dessert. You can make it into a softer pudding to eat with a spoon or into pudding squares to eat with your fingers. My daughter, Amber, got this recipe from a Hawaiian friend. I added the salt because I think it improves the flavor a lot.
Recipe:
28 oz coconut milk or coconut cream
3/4 C water
5-10 Tbs cornstarch (5 for pudding, 10 for squares)
4 dashes salt
1-1 1/2 C sugar, depending on your taste
Combine sugar, salt and cornstarch in saucepan. Add water and mix together. Add coconut milk or cream and whisk constantly over medium heat until it thickens or barely begins to boil. For pudding, cover pan with plastic wrap and let it cool. For pudding squares, pour into a glass 9 x 13 baking dish, cover with plastic wrap and refrigerate until cold, then cut into squares.
