Hawaiian Luau Fried Rice
I got this recipe from the internet and made a couple of adjustments. It's pretty delicious!
Recipe:
2 C Basmati, Jasmine or long grain day-old rice (I use brown of any of the three and cook it like this)
3 Tbs bacon drippings
1/2 C onion, finely chopped
1 tsp ginger, finely chopped
2 large cloves garlic, finely minced
1/2 C sliced ham, chopped
1/2 C crispy bacon pieces
1 C fresh pineapple, chopped
1-2 Tbs soy sauce
1/4 tsp pepper
1/4 C Macadamia nuts or almonds, roasted and chopped
1/2 C toasted flaked coconut
2 Tbs green onion, sliced
Melt drippings in wok or frying pan on high. Add onion, ginger and garlic and saute until fragrant. Add rice and stir-fry for a couple of minutes. Add soy sauce and stir-fry a little bit longer. Add everything else and stir to combine.
