Breakfast Casserole
This a my version of a yummy breakfast casserole.
Recipe:
Solid Mixture:
4 medium russet potatoes
1/2 C diced ham
1/2 lb Dana's maple sausage
4 green onions, thin-sliced
3 C cheese, grated
1 small can diced green chilies (optional)
Boil the potatoes until about half way done. Cool completely, peel and grate. Toss everything together and put in a greased 9 x 13 pan.
Liquid Mixture:
6 eggs, beaten
1/4 C milk
1/4 C sour cream
1 tsp salt
1/2 tsp black pepper
Blend together and pour over solid mixture, cover and bake at 400°F for 45-55 minutes, removing cover in the last 5 minutes.
